This rustic, fruit-filled twist on the classic pound cake is made with diced apples, black walnuts, and shredded coconut. This cake is ultra-moist and packed with texture and flavor in every bite!
Ingredients

2 cups sugar

1 ½ cup oil

2 eggs

3 cups flour

1 tsp baking soda

1 tsp salt

1 ½ tsp vanilla

3 cups diced apples

1 cup walnuts

1 cup coconut
Directions
Preheat oven to 350°F. Grease and flour a 10-inch bundt pan.
In a large bowl, mix together the sugar, oil, and eggs until smooth.
Add the flour, baking soda, salt, and vanilla. Stir until well combined.
Fold in the diced apples, black walnuts, and coconut. Mix gently but thoroughly.
Pour the batter into the prepared bundt pan and spread evenly.
Bake for 1 hour and 20 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 15–20 minutes, then turn out onto a wire rack to cool completely.

- For extra flavor, add ½ teaspoon of cinnamon to the dry ingredients.
